In many sichuan restaurants, they give you some sort of cold snack to enjoy while waiting for your food. One of my favorites is potato shreds. They are a simple dish of shredded potato stir fried over extremely high heat with sichuan peppercorns and seasoned with salt and sesame oil. While the dish is cooked, the texture is crispy and crunchy.
I researched a bunch of recipes online until I landed on this one. The technique is spot on. I made a few tweaks to make the dish my own (using homemade garlic + ginger oil and adding sliced jalapenos for extra forward heat). They're so simple to make. A perfect snack with cold beer on a hot summer day.
