Earlier this month I was out on the trails with Andrea and we got to talking about snacks from Hawaii. She says her favorite is a snack mix sold in Hawaii Costco Stores only.
This got me thinking about a recipe my family used to make with Chex or Crispix cereal. Unlike the tradition Chex Mix, this mix is sweet with an Asian twist, thanks to the addition of Furikake Mix. Highly addictive, I can nosh on this stuff all day.
I made mine with only Crispix cereal (Life or Chex cereals work great too). Still I've seen others add other items to mix- goldfish pretzels, mochi crunch and bugles- balancing the sweetness.
furikake snack mix
1/2 cup butter
1/2 cup white sugar
1/2 cup corn oil
1/2 cup light corn syrup
1-2 tablespoons soy sauce
2 (12 ounce) packages cereal (such as Crispix, Chex, Life etc.)
1 (1.9 ounce) container furikake
Preheat oven to 225°F.
Melt the butter and sugar together in a small sauce pan over low heat. Remove from heat, then stir in the corn oil, soy sauce and corn syrup.
Place the cereal on a large baking sheet. Pour the butter mixture over the cereal, then sprinkle the furikake while tossing the cereal to coat.
Bake in the preheated oven until the cereal is dry, stirring every 15 minutes to keep cereal from browning too quickly. Allow to cool, then store in an airtight container.
