new onggi

Today I purchased my first onggi to make kimchi. Until now, I'd been fermenting kimchi in glass jars. The onggi makes a more complex tasting kimchi in my opinion. And since the vessel allows air to escape, the fermentation takes longer to fully develop flavors (2-3 days in glass jars vs. 10 days in onggi).
