Roasted some beautiful cauliflower last night. Tossed with some extra virgin olive oil, garlic, sea salt + pepper. I discovered the trick to getting great caramelization is roasting it on the top rack of my oven- 425 degrees; 15minutes. Let rest for another 5 with the heat OFF; oven door closed.
