banana cowboy cookies

When life gives you ripe bananas + fresh walnuts... Make Banana Cowboy Cookies! These gems have a blend of all the great things in banana bread plus oats, mini-chocolate + butterscotch chips and coconut! The recipe makes a ton, so I've got plenty to share...anyone?




banana cowboy cookies

1 cup all-purpose flour
1/2 cup coconut flour
1 teaspoon coarse sea salt
1/2 teaspoon baking soda
1 stick butter, softened
1/4 cup coconut oil
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup mashed ripe banana (about 1 large or 3 small)
1 cup old-fashioned rolled oats
4 oz semisweet chocolate chips
4 oz butterscotch chips
1/2 cup coarsely chopped, toasted walnuts
1/2 cup shredded coconut

method
  1. Preheat oven to 375°F. 
  2. Sift together flours, salt, and baking soda in a small bowl; set aside. 
  3. Cream butter, sugars and vanilla together until pale fluffy.
  4. Add egg and banana; mix until combined.
  5. Add flour mixture; mix until just combined. 
  6. Fold in oats, chocolate, butterscotch, coconut and walnuts.
  7. Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 2 inches apart. Bake cookies until golden brown and just set, 12 to 13 minutes. 
  8. Cool on sheets on wire racks 5 minutes. 
  9. Transfer cookies to wire racks; let cool completely.
